We tried that place once last year, it was dirty and the fish was unfresh and smelly.
One thing that most import is the QUALITY, Instead of telling us how hard you had established your business (unless you were already very successful), Quality of the food and your service would sell your place.
As one of above friend said: "你做的东西,只有你自己吃着好了才能给客人吃,如果你自己都不能吃的东西,就一定不要给客人吃!!" I agree with this but, I prefer it's a standard for well trained professional chefs NOT for everyone including newbies.
You could enjoy eatting an unfresh fish yourself by putting more soy sauce, but do not even try to do that to your clients, even once. So, I would say the above standard is a minimum standard.
If you set this as your minimum standard, I am sure you would be very successful in your business.
