ingredients:
Chicken thigh fillets (cut into small pieces)
White mushrooms (diced)
Frozen green peas
Brown onion (diced)
Carrot (diced)
Oyster sauce
Light soy
Black pepper
Chicken powder
1 tablespoon cooking oil
Frozen puff pastry (thawed)
Egg yolk
Methods:
Marinate the chicken with oyster sauce, soy, pepper and chicken powder.
Heat oil in a frying pan, sauté the diced onions for 2 mins and add in the diced carrots and stir fry for a few mins.
Add marinated chicken and stir fry until chicken almost cooked. Add mushrooms and green peas and fry until chicken is cooked.
Preheat oven to 200 °C. Grease a muffin pan very well.
Cut circles in the pastry and gently press into the muffin pan. Add a small amount of the cooked chicken mixture into each muffin cup.
Cut smaller circles in the puff pastry and gently press onto the top of the pies. Gently press the edges together and seal them with a fork.
Brush the top of the pies with beaten egg yolk and bake for 15-20 mins or until golden brown. Remove from oven and allow to cool on wire rack.
