Healthy Mushroom Soup
Ingredients:
450g white mushrooms (thinly sliced)
4 tablespoons olive oil
1 medium brown onion (chopped)
2 cloves garlic (chopped)
4 tablespoons plain flour
1.5 L chicken stock
Freshly ground black pepper
Salt to taste
Methods:
Heat olive oil in a large saucepan. Add the onions and garlic, cook for a few minutes until softened. Turn up the heat and add the mushrooms and cook for about 5 minutes, stirring constantly.
Add the flour, and stir well to coat the mushrooms and onions. Pour in the stock, stir and bring to the boil. Simmer for about 15 minutes, stirring occasionally.
Allow to cool slightly, pour carefully into a food blender (in batches) and blitz until smooth. Season to taste and serve.
Naan
Ingredients:
1.5 cups plain flour
1 teasp sugar
1 sachet (7g) dry yeast
120ml - 150ml warm water
1 teasp salt
1 tablesp vegetable oil
Minced garlic
Melted margarine
Methods:
Mix the sugar and yeast with the warm water and rest for about 10 minutes.
Place the flour in a large mixing bowl and add the yeast mixture. Add the vegetable oil and salt and mix well. Add some extra water or flour as required.
Knead for a few minutes to form a dough. Place the dough back in the bowl, cover, and leave to rise for 1-1.5 hours in a warm place. The dough should be double in size.
Mix the minced garlic and melted margarine well in a bowl for later use.
Knead the dough for another 2 minutes and divide into 8 equal portions. Roll the dough into round or oblong shapes.
Heat up an electric frying pan over high heat and lightly spray or grease the frying pan with some oil. Brush both sides of the dough with the garlic mixture and place the dough in the frying pan. When burnt spots appear, flip it over and cook the other side. Repeat the same until all dough are done. Serve warm. |
