Ingredients:
2-3 skinless pork belly rashers (sliced)
Marinate ingredients for the pork belly:
1 dessertspoon light soy
1/2 teaspoon chicken powder
Pepper to taste
1/2 tablespoon cooking oil
2 cloves garlic (finely chopped)
1 - 1½ cups chopped kimchi
3 cups cooked rice
Chopped Spring onions
3 fried eggs
Sauce:
1/2 - 1 tablespoon gochujang (Korean red chili paste)
1 tablespoon kimchi juice
1 teaspoon light soy
1/4 cup water
1/2 teaspoon chicken powder
Methods:
Marinate the sliced pork belly with the Marinate ingredients for 1 hour.
Combine the Sauce ingredients in a bowl and mix well. Set aside for later use.
Heat oil in frying pan, add marinated pork belly and stir fry until cooked and light brown. Push the pork belly aside and add garlic and saute until garlic turns lightly brown. Add kimchi. Stir to combine.
Add rice and sauce, stir fry on high heat until rice absorbs the sauce evenly. Add in some chopped Spring onions and mix well.
Garnish with Spring onions and serve with fried eggs. |
