Sambal belacan is an indispensable condiment in Malaysian cuisine. It adds a great flavour to the dishes. It can be added to rice, noodles, salad, grilled fishes and many more dishes. It is also used as a dip with raw vegetables like cucumber and shredded cabbage.
There are many versions of Sambal Belacan but 3 ingredients: red chilies, belacan (shrimp paste), and lime juice are essential. Salt and sugar to taste is optional. You can refrigerate the Sambal Belacan for a week, or you can freeze it for up to a month.
Ingredients:
6 large red chillies (Deseeded)
8 bird's eye chillies
10g roasted Belacan
2 tablespoon lime juice
Salt to taste
Methods:
Cut chillies into small pieces. Pound or blend with belachan into a fine paste. Add salt and lime juice and mix well.
