Chicken Meatballs
Ingredients:
500g minced chicken
2 stalks spring onions (chopped)
1 teaspoon minced garlic
1 teaspoon chicken powder
1 teaspoon light soy
1 teaspoon Worcester sauce
1/2 cup breadcrumbs
1 egg
Freshly cracked black pepper
Cooking oil
700g Latina Italian Tomato & Garlic Pasta Sauce
Methods:
Combine the minced chicken, spring onions, garlic, chicken powder, soy, Worcester sauce, breadcrumbs, egg and pepper and mix well. Shape the chicken mixture into small balls.
Heat oil in frying pan, and fry the chicken balls until golden brown. Dish out.
In the same frying pan, pour in the pasta sauce and bring to a boil, stirring occasionally. Add in the cooked chicken balls and simmer for 10-15 minutes.
While the sauce is simmering, cook the spaghetti in a pot of boiling water until al dente. Drained and add some sauce to the spaghetti and toss to distribute. Serve the spaghetti in individual plates, topped with meatballs and sauce.
Roast Potato and Capsicum Salad
ingredients:
2 potatoes (peeled and cut into small pieces)
1/2 red capsicum (cut into small pieces)
1/2 green capsicum (cut into small pieces)
1/2 cup of corn kernels
1-2 tomatoes (cut into wedges)
Cooking oil spray
Praise French Dressing
Methods:
Preheat oven to 180°C-200°C.
Line a baking tray with baking paper. Place potato on prepared tray. Spray with oil and roast for about 20 minutes.
Add capsicum to tray. Toss to combine. Roast for 10 minutes and lastly add in the corn kernels and tomato wedges and continue to roast for 10-15 minutes until capsicum and potatoes are tender. Set aside for 10 minutes.
Place all the vegetables in a bowl, add in the French dressing and toss to combine.
