咖喱杂菜 (Sayur Lodeh)
Ingredients:
Curry paste:
Sambal Tumis (http://www.oursteps.com.au/bbs/f ... ead&tid=1236885)
Dried shrimps (soaked and chopped finely)
1/2 cabbage (cut into pieces)
1/2 carrot (sliced)
10-15 green beans (cut into 6 cm length)
10 fried tofu puffs (cut into pieces)
200 ml coconut milk
1/2-1 cup stock
Salt to tastes
Cooking oil
Methods:
Combine the Sambal Tumis and chopped dried shrimps together, mix well.
Heat oil in frying pan, sauté curry paste til oil separates. Add the cabbage, carrot and beans and stir fry for 5 mins. Add the coconut milk, stock and bring to a boil. Add the fried tofu puffs. Cover and simmer until vegetables are soft. Add in salt to taste. Continue stirring until mixture comes to a boil.
香料烤鸡腿肉 (Spiced Oven Roasted Chicken Thigh Fillets)
Ingredients:
500g chicken thigh fillets
Marinate:
1/2-1 teaspoon chilli powder
1/2 teaspoon cumin powder
1/2 teaspoon Coriander powder
1/2 teaspoon Turmeric powder
1/2-1 teaspoon minced garlic
1/2 teaspoon Chicken powder
1/2 teaspoon dark soy
1/2 teaspoon light soy
Pepper
Methods:
Marinate the chicken fillets with all the ingredients listed under Marinate, mix well and marinate over night.
Preheat oven to 180°C, roast or bake for 40 mins and change to Grill function and grill the chicken fillets for 5 mins or until chicken skin blisters in spots.
