干咖喱, 快上做法。
Ingredients:
1 kg whole chicken or chicken thigh fillets
1 cup coconut milk
1/2 to 1 cup water
4-5 tablespoon kerisik (toasted grated coconut, I used desiccated coconut)
Salt to taste
3 tablespoon cooking oil
Spice paste:
2 lemongrass (white part only)
1 medium size brown onion
4 glove garlics
7 - 10 dried chillies (soaked in hot water and deseed)
1 inch ginger
1 inch galangal
1 inch turmeric
Methods:
Cut the chicken into large pieces.
Blend all the Spice Paste ingredients in a food processor.
Heat the oil in a frying pan, add the Spice Paste and fry until aromatic.
Add the chicken and stir to combine well with the spices.
Add the coconut milk, water, and simmer on medium heat, stirring frequently until the chicken is almost cooked.
Add the kerisik (toasted coconut), stir to blend well with the chicken. Lower the heat to low, cover the lid, and slowly simmer for 30 minutes or until the chicken is tender and the liquid has dried up. Add salt to taste.
Kerisik (toasted coconut)
It is best to use freshly grated coconut, I used desiccated coconut as I couldn't find any freshly grated coconut.
1 cup of grated coconut usually makes about 2/3 of cup of Kerisik or 1 cup of dessicated coconut makes 1 cup of Kerisik.
Preparation:
In a dry pan, add the desiccated coconut. Turn on the heat on low, and slowly toast the coconut until it turns golden brown. Try not to burn it. Dish up and set aside for later use.
