Prawn Fettuccine in tomato and garlic sauce
2 servings
Ingredients:
150g Fresh fettuccine
18 Fresh prawns
Latina tomato and garlic pasta sauce (I got the 425g tub, only used half of it)
2 bunch Asparagus
6-8 Mushrooms (sliced)
Basil (shredded)
Olive oil
Salt and pepper to taste
Methods:
Wash and cut the asparagus, toss with olive oil and a bit of salt and roast in a 200 °C for about 5 mins or until soft but not too soft. Put aside for later use.
Clean the prawns and marinate with pepper and salt and set aside.
Cook the fettuccine in a pot of boiling water with salt until al dente, drained and set aside.
Heat oil in frying pan, fry the marinated prawns on both side until half cooked and dish out.
In the same frying pan, add in th sliced mushrooms (If required, add more oil) and fry for a few mins. Pour in the pasta sauce and bring to a boil, add in the half cooked prawns and fettuccine and cook for a few mins, add in the asparagus and shredded basil and mix well. Dish out and serve with salad and garlic bread.
