Ingredients:
6-8 Prawns(shelled, veined)
12 Straw mushrooms (cut into half)
1 stalk of lemongrass(use only bottom 4-5 inches, cut into half in length, and smashed it to release the fragrance)
4-6 Kaffir Lime leaves (lightly crush a little)
1/2 inche galangal (slice)
1 Medium size ripped tomato (Cut into cubes)
3-5 Thai Chilli (cut into 1 cm in length)
Seasoning:
1 tablespoon Fish Sauce
2 tablespoon lime juice
Salt to taste
3-4 Cups chicken stock
Methods:
In a cooking pot, add chicken stock, bring to boil, add prawn shells and heads and cook for 10 minutes.
Add lemongrass, galangal, Kaffir lime leaves and chilli, cover with lid and cook on medium heat for another 10 minutes.
Remove the herbs and prawn shells, bring the soup to boil again, add tomato pieces, mushroom and prawns, season with fish sauce, salt and lime juice, taste it and adjust sourness and saltiness if required. |
