杂菜(Chap Chye)
Ingredients:
Chinese dried mushrooms (soaked till soft)
Glass or Cellophane noodles (soaked till soft)
Fried bean curds (cut into smaller pieces)
Black fungus (soaked and tear into smaller pieces)
Cabbage (washed and cut into chunky pieces)
Cooking oil
Chopped garlic
Chicken powder
Oyster sauce
Light soy
1/2 cup water
Methods:
Heat oil in frying pan, add in the chopped garlic, fry till just turn lightly brown, add in the mushrooms and fry till fragrant.
Add cabbage and black fungus and stir fry till cabbage almost wilted, add soy, oyster sauce and chicken powder and mix well.
Add fried bean curds and water (add more water if necessary) and cover the pan and let it simmer for 15mins.
Add glass noodles and let it absorb the sauce. Dish up and serve.
甜酸鸡块
Ingredients:
250g chicken thigh fillets (cut into bite-size cubes)
1/2 small green capsicum (cut into small pieces)
1/2 small red capsicum (cut into small pieces)
1/4 brown onion (cut into small pieces)
2 cloves garlic (finely chopped)
Oil for frying
1 teaspoon light soy
Egg (beaten)
Cornflour
Plain flour
Sweet and Sour Sauce:
3 tablespoons tomato sauce
2-3 tablespoons chilli sauce
1 teaspoon plum sauce
1/2 teaspoon Worcestershire sauce
1/4 teaspoon Chinese rice vinegar
1/2 teaspoon oyster sauce
3-5 tablespoons water
1/2 teaspoon cornflour
3 dashes white pepper powder
Methods:
Marinate chicken with light soy and 1 teaspoon of cornflour for 20 mins.
Mix the sweet and sour sauce in a small bowl and set aside.
Mix the flour and cornflour in a bowl. Dip the chicken cubes in beaten egg letting excess egg drip back into the bowl and coat the chicken cubes with the flour mixture.
Heat oil in frying pan, fry the chicken cubes until golden brown on both sides. Dish out the chicken.
Leave about 2 tablespoons oil in the frying pan. Add garlic and fry the chopped garlic until light brown and then follow by the onion and capsicum pieces. Stir-fry until you can smell the aroma. Add the sweet and sour sauce into the frying pan and bring it to boil. Toss in the chicken, do a few quick stirs, dish out and serve. |
